Pineapple and Black Bean Salad

I got this recipe from my BFF Babs.  Great "pantry" recipe as I usually have all the ingredients.  Low fat, high protein.


1 can (16 oz) black beans, drained
1 can (8 oz) pineapple tidbits, drained
1/4 cup finely chopped red bell pepper
1/2 cup thinly sliced scallion
1 avocado, chopped

2 t rice wine vinegar
1/2 t ground cumin
1/4 t salt
pepper to taste

1.  Combine all ingredients; mix well.
2.  Chill several hours or overnight
